Most common screen surfaces work by reflecting the incoming light uniformly in all directions.

Ambient light rejecting screens work by Angular Reflectivity.  In other words, a ceiling mounted projector’s light will be at a correct angle to return to the viewer as a bright vivid image.

While light from say ceiling lights will bounce off at an angle that won’t return to the viewer’s eyes.

So your image remains bright and vivid even with the lights on.
